Zak Olkewicz was born on December 19, 1983, in Los Angeles County, California, United States. He is the son of actor Walter Olkewicz, who appeared in productions including Twin Peaks, Grace Under Fire, and Seinfeld. His mother is Julie Ewing Nikkel.
During his teenage years, Zak moved from Escondido to Burbank to spend more time caring for his father, who was dealing with serious complications following knee surgeries.
Zak eventually left Burbank High School before graduation, but continued his education independently. In 2003, he achieved a perfect 4,000 score on the GED examination, becoming the only person among 569,000 California test takers over the preceding decade to achieve that result and one of only six people nationwide to score perfectly that year.
He subsequently attended Palomar College in Escondido and originally considered a career in computer software design.

Olkewicz entered the film industry as a writer and producer, gradually building credits in independent and studio productions. One of his early producing credits was the horror short Lights Out, released in 2016.
He later wrote the story and screenplay for Fear Street: Part Two – 1978, the second installment of the Fear Street film trilogy, released by Netflix in 2021.
His major breakthrough came in 2022, when he wrote the screenplay for Bullet Train, the action thriller starring Brad Pitt, Aaron Taylor-Johnson, Joey King, Brian Tyree Henry, and Andrew Koji.
